This method was shown to me by a Native from northen Quebec Decades ago. I still use it to this day.

Never understood why anyone would cut the fillets off with the ribs and then remove them after... why not just keep following that original spine cut and follow the ribs down to the belly.  Less waste and it faster 


One additional step if you want truly boneless fillets, is to use the 'zipper method' to remove the mud line which contains the little bones that are impossible to get out otherwise
